Ingredients and spices that need to be Take to make Chicken Korma:

  1. 1.5 kg chicken
  2. 3-4 medium size onion sliced and fried as barista
  3. 1 cup curd
  4. 1/2 cup ghee
  5. 2 tbsp ginger garlic paste
  6. as required Whole spice (4 green cardamom,1 cinnamon stick,2 bay leaves)
  7. 12 almonds
  8. 12 cashew
  9. 2 tsp dried melon seeds(optional)
  10. 2 tbsp coriander powder
  11. 2 tbsp Kashmiri red chilli powder
  12. 2 tsp red chilli powder
  13. 1/2 tsp garam masala powder
  14. 1/2 tsp Zeera powder
  15. 1/4 tsp turmeric powder
  16. to taste Salt
  17. Pinch cloves powder
  18. Pinch green cardamom powder
  19. Pinch javitri powder (mace powder)
  20. Pinch jayefal powder (nutmeg powder)

Instructions to make to make Chicken Korma

  1. First of all we will soak the almonds,cashew and melon seed for 15 minutes in hot water and make fine paste.
  2. Now we will fry thinly sliced onion to make barista.
  3. In a deep pan we will add ghee and whole spices (green cardamom,cinnamon stick and bay leaves) let them release flavour for a minute then add the washed chicken to ghee and cook on high heat till it̢۪s water dried.
  4. Later we will add ginger garlic paste to the chicken,mix well and sauté for 2 minutes then add in half of the curd to the chicken and cook till water of curd get dried.
  5. Now add all the powder spice ( Kashmiri red chilli powder, coriander powder,red chilli powder,garam masala powder,zeera powder and salt to taste, mix well for a minute and then add in the paste of cashew and almonds, mix well and cook for couple of minutes till it release ghee.
  6. Meanwhile we will crush barista by add half of the curd which we have saved earlier. (note: We are not allowed to make smooth paste just crush the barista)
  7. Now we will add chrushed barista to chicken mix well if needed add 2 tbsp water sauté cover and cook on low flame for 5 minutes.
  8. Later add each pinch of all four spice powder (jayefal,javitri,green cardamom and cloves powder).mix well and add water according to your requirement or just add 1/2 cup water,cover and cook for another 7-8 minutes on low heat.
  9. Lip smacking chicken Korma is ready to enjoy with any roti,naan,rice or pulav.
