  6. 1 small onion, minced (optional, I didn't add any this time)
  7. 1 can (4 ounces) chopped green chiles
  8. 1 can chicken soup concentrate, diluted (10.75 ounces)
  9. 1 cup gravy
  10. 2/3 cup milk

Steps for Not Making Real Mexican Chicken Manicotti

  1. Preheat the oven to 350*
  2. Go ahead and cook the manicotti, but only al dente (I like 7 minutes).
  3. Gather the ingredients for the chicken mixture: cheese, sour cream, red pepper, onion and chicken.
  4. Drain the chicken well and break it up with a fork or your fingers.
  5. In a large bowl, combine 1 1/2 cups Monterey Jack cheese, 1 1/2 cups cheddar cheese, sour cream, pepper and halved onion for the chicken.
  6. Gather the ingredients for the second mixture: soup, sauce, milk and the rest of the chopped onion.
  7. Mix everything with a fork.
  8. Spread 3/4 cup of the sauce mixture in the bottom of a 9x13 pan.
  9. Drain and rinse with cold water. I find that if you arrange them individually on a cutting board or plate, they stick less and are easier to stuff.
  10. Time to kill! The sleeves are easy to fill little by little and only halfway….
  11. ..... then turn around and start again.
  12. When filling the sleeves, add them to the pan until compacted. (Usually I can put all but one in - don't shred them or they won't come out when I'm done)
  13. Top with remaining sauce mixture.
  14. Cover with transparent film and bake at 350 * 30 minutes
  15. Remove foil and add remaining cheese (1/2 cup cheddar and 1/2 cup Monterey Jack) and bake another 10 minutes or until cheese is melted (or a normal person can eat it).
  16. That's the beauty of the whole pan.
