  1. To start our pastiche, the first thing we need to do is add the ground beef sauce. We begin to finely chop the onion, our fresh tomatoes - into square pieces. We add enough olive oil to cover the bottom of the pan and add the onion and stir until the color turns golden.
  2. Place beef/veal in pot or pan and stir, add all ingredients listed (except eggs and breadcrumbs) and stir. Add enough water to not completely cover the mixture and bring to a boil. Don't forget to mix.
  3. Tip: If you use tomato paste instead of fresh tomatoes, put the tomato paste in half a glass of water. Stir until the noodles are melted, then add to the sauce.
  4. We take our casserole, add 2 teaspoons of salt and literally a drop of oil and cook the pasta. Strain and save for later. Take a pan greased with oil, sprinkle on it and rub the cheese on a fine grater. When ready, add the noodles and toss in the pan, add 2 beaten eggs and stir until the eggs are incorporated into the noodles. Garnish with more grated cheese, then add the meat mixture and spread over the pasta. Save on computer
  5. Tip: egg paste sticks together.
  6. Add all the béchamel ingredients to the saucepan except the flour. Stir and simmer gently, add spoonful by spoonful and continue stirring until a large mass is formed.
