  6. 880 g water (4 cups)
  7. OPTIONAL (for color and health):
  8. 4 grams fresh turmeric
  9. After the vegetables are cooked, add:
  10. 35 g nutritional yeast (4 tablespoons together)
  11. 16 g Himalayan salt (2 tsp)
  12. 140 g soaked cashews (1 cup)
  13. optional for black color:
  14. 1/2 teaspoon turmeric (if not fresh)

  16. 950-1000g pasta of your choice (mostly pasta)

Mac 'n' Cheese Cooking Instructions

  1. Most vegetables are diced in a food blender. Thermomix = tmx
  2. OR without tmx: diced vegetables in a pot of boiling water (amount indicated in recipe, here 4c)
  3. Add 4 cups warm water to TMX (if water is room temperature, add another 5 minutes for cooking time in next step)
  4. Program Varoma on level 1 for 20 minutes and cover with lid and strainer.
  5. Without tmx: Cook vegetables soft and buttery, about 20 minutes.
  6. Bring lightly salted water to a boil.
  7. Add the pasta (pasta, "tiburon pequeño" in Spanish is perfect) and cook until al dente (remember that the pasta will absorb a lot of the cheese sauce, so don't soak it).
  8. After the vegetables are cooked, turn off the heat and leave in a saucepan/tmx with a lid.
  9. Without a kitchen blender, you can now put vegetables in a regular heat resistant blender OR
  10. Use what you normally use to mix products. Manually, of course, it will take longer, but don't give up. If necessary, stir in the cashews first in addition to the vegetable mixture and sift the last portion before adding it to the vegetables.
  11. Add spices to the pot, optionally add turmeric and cashew nuts, or add vegetables.
  12. For program tmx 100°C speed 90 seconds 6 OR if using blender without boiling, blender without temperature option
  13. The cashews may not be fully integrated and homogeneous, so stir on high speed for 60 seconds.
  14. Drain pasta immediately after cooking and place in a saucepan.
  15. Pour the puree and vegetable mixture (should look like melted cheese) over the pasta and mix well.
  16. On top of the pasta, add a few pieces of pepper to taste, without stirring, and pour the remaining vegetable-cheese sauce
  17. Sprinkle cheese on top if you want a melted cheese crust.
  18. Bake in an oven preheated to 220°C for 10 minutes.
  19. Bring to a boil and check the melted cheese. As soon as it melts, reduce to 170 ° and leave for another 5 minutes.
  20. Remove from oven, let stand 5 minutes. Then divide and serve with sweet or spicy paprika, whichever you prefer.
  21. Depending on your individual taste, you or your guests can add a pinch of salt and pepper to the mac and cheese.
